Just ignore the spoon lol I couldnt wait to take a bite! Here is the recipe:
16oz package of pasta, cooked (I used brown rice spiral pasta but you can use whatever you have on hand or prefer)
1 tbs olive oil
8 skinless chicken breast tenders cut into bite sized pieces or about 2 smaller chicken breasts
1 small red onion chopped
2.5 tbs of flour (I used Bob's Red Mill Gluten Free All Purpose flour)
2 cups of milk
1 tsp of garlic powder
1 tsp of ground mustard
1/2 tsp of smoked paprika
Salt and Pepper to taste
2.5 cups of cheddar cheese shredded
1/4 cup of sour cream
1/2 cup of spinach chopped
Boil pasta according to packaged directions or until al dente. Drain and set aside. In a medium sized sauce pan add 1 tbs of olive oil and heat pan, cook chicken until light brown, add the onion and cook until translucent. Sprinkle flour over chicken and onion. Cook for 1 minute. Add milk and simmer until it starts to thicken. Stir in the garlic powder, ground mustard, smoked paprika, salt and pepper. Take off heat and add cheese stiring as it melts. Mix in the sour cream. Add pasta and stir gently to coat. Mix in Spinach. Serve. Makes 4-6 servings depending on appetites :-)
I don't eat pasta but I bet this would work with zoodles (zucchini noodles). Looks like good comfort food.
ReplyDeleteI bet that would work! Pasta is one of my guilty pleasures. I do not feel so bad since I started using brown rice or quinoa pasta :-)
